Heather Long's #Holiday #Giveaway: Michelle Fox's Molasses Crackle Top Cookies #Foodie

Hello! Happy Holidays! I'm going to share a very special recipe with you. My grandmother was known for her baking prowess and these cookies are inspired by hers. They are crispy on the outside, soft and chewy on the inside with a rich holiday flavor that makes you think, if you just ate enough of them, you might actually turn into Santa.

My family loves these cookies to the point where I have to hide them or a few little piggies will eat them all! To me, they taste just like Christmas. Enjoy!



Ingredients:

2 1/4 cups all-purpose flour
2 teaspoons of baking soda
1/2 teaspoon of salt
1/2 teaspoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup dark brown sugar, packed
1/2 cup granulated sugar, plus 1/3 cup for rolling cookies
1 large egg
1 teaspoon vanilla extract
1/3 cup molasses

Instructions

1. Preheat your oven to 375F.

2.Mix the dry ingredients in a separate bowl (flour, baking soda, salt, spices) and set aside.

3. Cream the butter and sugar.

4.Add the egg, vanilla and molasses to the butter and sugar. Mix well.

5. Turn down the mixer and add in the dry ingredients. 

6. Form balls about the size of ping-pong balls, roll in granulated sugar and bake for approximately 10 minutes. 

7. Optional: Give 'em a good whack when they come out of the oven to collapse air pockets and produce a moist, chewy cookie. I have a small metal spatula I use for this. It's called the cookie whacker in my house. lol

Heather Long's Holiday Giveaway


As we go into the holiday season, I have been asking myself what I can do or how I can give to others. It has been a tough year for my family and a tough year for many families whether it is our soldiers fighting overseas, their families waiting at home, death in the families, divorces, economic hard times, cutthroat politicians trading on fear and hate and last, but most certainly not least tragedies such as those faced in Paris, Beirut, and many other places.

We are very familiar with the choke of the times. Here, I wanted to give something back this holiday season. Years ago, one of my local radio stations used to have write ins for people to nominate families for Christmas or holiday gift certificates. Nominated families or individuals included those who really were not going to have much to celebrate because they couldn't afford gifts or decorations or a big Christmas meal.

Beginning today and lasting until December 18, I am hosting a holiday give away post featuring an item and the author who is giving it away. To enter, all someone has to do is nominate the person they want to send the gift to and post a short reason why. If that person wins, then the gift will be sent to the recipient with a note wishing them a happy holiday season signed from the author giving it away, me and of course the person who entered them.

So far, I have several authors and items pledged to this effort. Be sure to visit daily throughout the holiday season and nominate those you love and care about and send them a gift – and yes, I will send them around the world!
